Hobo Soup (2 points)

6 servings (~ 1 1/2 cups each)


Ingredients:

115 g capellini pasta, broken into pieces

1/2 medium onion, diced

2 large celery stalks, sliced

1 tbsp garlic, minced

1 1/2 tsp ground ginger

2 tsp ground cumin

2 tsp date powder

1 tsp table salt

1 tsp smoked paprika

1 tsp dried cilantro

1/2 tsp tumeric

1/4 tsp ground cinnamon

1/4 tsp black pepper

1/4 tsp cayenne pepper

5 cups fat free chicken broth

1, 28 oz can crushed tomatoes

1/3 cup red lentils

1/3 cup green lentils

1, 15 oz can navy beans, drained and rinsed


Directions:

Cook the broken capellini according to the package directions, drain and rinse with cold water. Set aside.

In a large lightly sprayed pot, over medium high heat, saute the onion for about 5 minutes.

Add the celery and garlic, cook for another minute.

Add the rest of the ingredients (except the pasta), mix, bring to a boil and then reduce the heat, cover and simmer for 30 minutes.

Remove from the heat and add the cooked pasta. Serve.


Suggested Serving: Can be served with a squeeze of lemon and/or a dollop of plain 0% yogurt.
