Ingredients:
1 lb ground chicken breast
3 tbsp dried bread crumbs
1 egg
1 tbsp italian seasoning
1 tsp dried basil
1 tsp garlic powder
1 tsp onion powder
144 gm light mozzarella cheese, cut in 12 cubes
Directions:
Add the ground chicken, bread crumbs, egg and spices in a medium bowl, mixing until thoroughly combined..
Wet your hands and divide mixture into 12 equal meatballs. Wetting your hands while making the meatballs stops them from sticking.
Cut the mozzarella into12 equal pieces.
Flatten each meatball in the palm of your hand, place a piece of cheese in the center and then wrap the meat around the cheese and reform into a ball.
Place meatballs on a sprayed, parchment lined or silicon mat cookie sheet.
Bake at 350F preheated oven for 30 minutes, flipping the meatballs over at 15 minutes.
Serve with spaghetti squash or veggie noodles and tomato sauce.
