Japanese Vegetable Soup (0 personal points)

4 servings (1 cup each) Ingredients: 1/2 cup oat groats 4 cups vegetable broth 1 tbsp soy sauce 1/2 cup carrot, grated 4 shitake mushrooms, stem removed, sliced 2 green onions, sliced 1 tsp sesame seeds Directions: Cook the oat groats in plenty of water for 30 minutes over high heat, until well cooked and tender. Set aside. Add the broth to a saucepan and heat on medium high heat until it is hot. Add the carrot. Cook for 3 minutes or until soft. Add the mushroom, cooked oats and soy sauce. Cover and cook for 8 minutes. Add the onion and sesame seeds. Serve. Suggested Serving: Serve with additional sesame seeds, spring onion or chives.
