Ingredients:

2 cups fruit, fresh or frozen

1/2 cup splenda

1 tsp lemon juice

1 pkg no sugar added jello


Directions:

Add the fruit, sweetener and lemon juice into a medium saucepan and mix to combine.

Bring to a boil, over medium high heat.

Reduce heat and cook for a couple of minutes, mashing the fruit while stirring. With the more fibrous fruit I use an immersion blender.

Remove from heat and add the package of jello powder.

Stir until dissolved. Pour into a covered container and chill in the refrigerator until set, about 4 hours.

Be sure to vigorously mix (to break up jello clumps) occasionally while cooling and before serving to get a more jam like consistency.
