2 servings (1 chicken breast + 1/2 rice mixture)
Ingredients:
1 tbsp jerk seasoning
1 lime, juice only
2 uncooked chicken breasts
1 cup cooked basmati rice
1/2 cup black beans, drained and rinsed
2 spring onions, finely chopped
Directions:
Mix the jerk seasoning with the lime juice to make a paste.
Score the uncooked chicken breast. Rub the paste all over, making sure to get some into the cuts.
Air fry the chicken @390F until cooked (check temperature), around 10-15 minutes.
Meanwhile, cook the rice according to the instructions. Add the beans and onions 2-3 minutes before the end of the cooking.
Serve with your favourite vegetables.
