Jicama Apple Slaw (3 points)

4 servings (1/4 slaw mixture)


Ingredients:

20 oz uncooked jicama, peeled and shredded

8 oz fresh apple, cored and shredded

1 oz banana peppers, thinly sliced

3 oz red onion, thinly sliced

1 lime, zest and juice

2 tbsp apple cider vinegar

6 tsp olive oil

6 tsp reduced calorie mayonnaise

1 pinch table salt, hefty

1 pinch black pepper


Directions:

Add all the veggies and apple to a large bowl. Set aside.

Whisk together the lime zest and juice, apple cider vinegar, olive oil, mayonnaise, salt and pepper.

Pour the dressing over the slaw and toss until completely coated.


Suggested Serving: Serve with pepitas and tanjin seasoning as an excellent side dish or added to tacos.
