Leftover Oatmeal Bake (1 point)

Ingredients:

1 cup cooked oatmeal

1 egg

3 tbsp kodiak pancake mix

1/4 tsp baking powder


Directions:

Preheat oven to 350F.

Add all ingredients into a small bowl and mix until well combined.

Add the batter into a sprayed oven proof ramekin.

Bake for 30-35 minutes.


Suggested Servings: Add-ins may include a handful of berries, chopped fruit, chocolate chips, raisins, coconut, nuts or seeds. Be sure to count any additional points.

Today making leftover oatmeal waffles with rest of batch..have you ever frozen these for later use?

No I have not. They should freeze okay though. I would cool completely and wrap individually.

Made big batch growing oatmeal using my blueberries then hated the consistency. Made your leftover oatmeal bake..drizzled with swerve confectioners icing with cinnamon..saved the day! Thank you!

I guess not everyone has the same taste. I love the consistency! As long as you use the large flake oats and let it sit overnight, then stir. I find them so creamy 😋 Glad you were able to find a way to eat them though 😁
