Leftover Oatmeal Pancakes/Waffles (1 point)

2 servings (2 pancakes)


Ingredients:

1/2 cup overnight growing oatmeal

1 egg

2 tbsp kodiak mix

1 tbsp splenda

1/4 tsp baking powder

1 pinch table salt


Directions:

Preheat a mini pancake maker or skillet. When hot, spray lightly with oil.

Add all the ingredients into a medium bowl and mix until well combined.

Pour 2 heaping tbsp batter into the hot pancake maker or skillet.

Close lid, cook until cooked through. If using a skillet, flip pancake once bubbles begin to form.

Repeat until batter is gone. Should make around 4 pancakes/waffles.


Suggested Serving: Serve with fresh fruit and no added sugar pancake syrup.
