Lemon Artichoke Chicken (4 points)

4 servings (1 breast + 1/4 artichoke/onion/caper mixture each)


Ingredients:

16 oz (4) chicken breasts

2 cans artichokes without oil, quartered

1/2 large onion, sliced

1/4 cup capers, drained

1/4 cup light butter

2 lemons, juice only

1/2 cup fat free chicken broth

1 tsp minced garlic

1 tsp dried thyme


Directions:

Preheat oven to 350F. Prepare a roasting pan by spraying lightly with oil.

Spread the chicken, artichokes, onion and capers in the prepared roasting pan.

Microwave the butter until melted. Add the chicken broth, lemon juice and garlic. Mix and drizzle all over the chicken, artichokes, onions and capers. Sprinkle with the thyme.

Bake for 30-40 minutes or until the chicken is browned and cooked through.
