Mexican Bagel Bake (3 points)

4 servings (1/4 bake with 1/2 bagel)


Ingredients:

2 odough's thin bagels, split

5 eggs

1/4 cup fat free salsa

39g light tex mex cheese, shredded


Directions:

Preheat the oven to 350F. Prepare an 8"x 8" square pan by lightly spraying it with oil. Add the 4 bagel halves, split side down, in a single layer. Set aside.

Whisk together the eggs and salsa. Pour over the bagel halves. Make sure the bagels are thoroughly covered with the egg mixture.

Sprinkle the light cheese on top and bake for 20-25 minutes or until the eggs are cooked through and the cheese is lightly browned.


Suggested Serving: Serve with sliced green onions, fat free plain yogurt and additional salsa.
