Mexican Brownie Bake (3 points)

6 servings (1/6 pan)


Ingredients:

1 cup old fashioned oats

1 cup quick oats

1/4 cup unsweetened cocoa

3 tbsp date powder

2 tsp ground cinnamon

1 tsp baking powder

1/2 tsp ground cayenne pepper

1/2 tsp table salt

1 medium banana, ripe and mashed

2 eggs

1/2 cup unsweetened almond milk

1/4 cup 0% plain siggi's yogurt

1 tsp vanilla extract

43g chocolate chips


Directions:

Preheat the oven to 350F. Prepare an 8" x 8" square pan by lightly spraying it with oil. Set aside.

In a medium bowl, combine the oats, cocoa, date powder, cinnamon, baking powder, cayenne pepper and salt. Set aside.

In another bowl, whisk together the mashed banana, eggs, milk, yogurt and vanilla extract. Add to the dry ingredients and mix until well combined.

Pour the batter into the prepared pan. Sprinkle on the chocolate chips. 

Bake for 25-30 minutes.
