Microwave Blueberry Sauce (0 points)

4 servings (1/4 cup each)


Ingredients:

1 cup fresh blueberries, or thawed from frozen

2 tsp yupik date powder

1 tsp cornstarch

1 tsp vanilla extract

1 pinch ground cinnamon


Directions:

Add 1/2 cup fresh, or thawed from frozen blueberries, to a deep microwave safe bowl. Set aside the other 1/2 cup.

Add the cornstarch, date powder, vanilla and cinnamon. If using fresh fruit, add a tbsp of water. Stir to combine.

Microwave mixture for 1 minute. Stir and add the remaining 1/2 cup of blueberries. Stir.

Sauce will thicken as it cools. If too thick, add water, a teaspoon at a time, until the desired consistency is achieved. Store any unused sauce, covered in the fridge.


Suggested Serving: This sauce is good on baked cheesecake, waffles, pancakes, yogurt, in smoothies or spread on toast, bagels or muffins.


Variations: This sauce can be also made savoury by adding a tbsp of diced onion before microwaving and a 1/2 tbsp of balsamic vinegar and lemon juice after.
