4 servings (1/4 cup)
Ingredients:
1/2 cup freshly lemon juice
5 tbsp swerve granular sugar
2 eggs, lightly beaten
Directions:
Add all the ingredients into a medium sized bowl.
Microwave for 30 seconds, then take out and stir.
Repeat another 3 times.
Pour into a small canning jar.
Love this recipe! The strangest thing happened this last batch- After a couple days in the fridge, the sugar substitute crystalized & is crunchy...Not hating it though- Kind of reminds me of a gentler rock candy :) Wondering if it's because I stored in regular tupperware instead of a jar.
