Mini Lemon Cake (1 personal point)

4 servings (1/4 cake each)


Ingredients:

1/4 cup unsweetened applesauce

1 large egg

2 tbsp splenda

1/2 large lemon, juice and zest ( about 1 tbsp each)

1/2 tsp vanilla extract

1/2 cup kodiak mix


Directions:

Preheat oven to 350F. Prepare a 6" round cake pan by lightly spraying it with oil. Set aside.

In a medium bowl, add the applesauce, egg, splenda, lemon juice and zest. Add in the vanilla and whisk well.

Add in the kodiak mix and mix to combine. Transfer to the prepared baking pan.

Bake 20 minutes. Let cool before serving.


Suggested Serving: Serve with cool whip, lemon curd and/or fruit.
