Ingredients:
26g uncooked oat groats
1/4 cup cucumber, chopped
9g sliced almonds, toasted
1/4 medium lemon, juice and zest
1 medium orange, segments
Directions:
Place the oat groats in a saucepan and add 2 1/2 cups water. Bring to a boil, lower the heat and simmer for 60 minutes. Drain and cool.
Toss the oat groats with the rest of the ingredients.
Suggested Serving: Serve as breakfast or as a side salad.
