Oat & Lentil Bake (0 personal points)

Ingredients :

1 1/2 cups uncooked rolled oats

5 tbsp splenda

1/4 cup red lentils

1 tsp baking powder

1 tsp ground cinnamon

1/4 tsp table salt

1 cup mixed berries, fresh or frozen

2 cups unsweetened almond milk

2 large eggs

2 tbsp unsweetened applesauce

2 tsp vanilla extract


Directions:

Preheat oven to 375F. Prepare an 8" square baking dish by lightly spraying with oil. Set aside.

In a medium bowl, combine the oats, splenda, lentils, baking powder, cinnamon and salt. Set aside.

In another bowl, whisk together the milk, eggs, applesauce and vanilla.

Add the wet ingredients to the dry ingredients and mix until just combined. Fold in the berries. Pour into the prepared baking dish.

Bake for 35-40 minutes until cooked through.


Suggested Serving: Serve warm with or without a splash of milk. Reheats well.
