Roasted Sweet Potato/Pineapple (0 points)

4 servings (1/4 mixture each)


Ingredients:

1 large sweet potato, peeled, cubed

1 cup pineapple, chunks

1 cup bell pepper, chopped

1/2 small red onion, chopped

2 tsp tajin spice

1 tsp minced garlic

1 tsp olive oil


Directions:

Preheat the oven to 425F. Prepare a baking sheet by lightly spraying it with oil. Set aside.

In a large bowl, combine all the ingredients. Pour the mixture on to the prepared baking sheet making sure nothing overlaps.

Bake for 30-35 minutes, flipping every 10 minutes.


Suggested Serving: Excellent side dish.
