Ingredients:
1 cup quick oats
1 tbsp date powder
1/4 tsp table salt
1/2 tsp ground cinnamon
1/2 medium banana, ripe, mashed
1 egg white
1/2 tsp vanilla extract
Directions:
Preheat oven to 350F. Spray 4 wells of a 12 muffin tin. Set aside.
Combine oats, date powder, salt and cinnamon. Set aside.
To another bowl add the mashed banana, egg white and vanilla extract. Whisk together to combine.
Add wet ingredients to dry and mix well.
Add 1/4 mixture to each sprayed muffin cup. Using a spoon, press up the sides of the muffin cup to form a nest.
Bake 25-30 minutes. Let cool completely before removing them.
Store in a covered container in the refrigerator for up to a week.
Suggested Serving: These can be filled with yogurt, pudding or/and fruit.
