Ingredients:
1 cup kodiak mix
1/2 cup rolled oats
3 tbsp splenda
2 tsp ground cinnamon
1 1/2 tsp baking powder
1/4 tsp table salt
1/2 cup plain fat free greek yogurt
1 large egg
2 tbsp unsweetened applesauce
1 tsp vanilla extract
Directions:
Preheat oven to 350F. Prepare a baking sheet by putting down parchment paper. Set aside.
In a medium bowl combine the kodiak mix, oats, splenda, cinnamon, baking powder and salt. Mix well. Set aside.
In another medium bowl combine the yogurt, egg, applesauce and vanilla extract. Mix well.
Add the wet ingredients to the dry ingredients and mix until combined.
Dump the dough out onto a lightly floured surface and knead a few times.
Form the dough into a 7" circle. Cut into 6 triangles.
Bake for 20-25 minutes until each scone is cooked through and golden brown.
Variation:
Carrot Cake - add 3/4 cup grated carrot and 1/4 tsp nutmeg to the recipe.
