Orange Salmon (1 personal point)

Ingredients:

2 salmon filets

1 orange, divided

2 tbsp soy sauce

1 tbsp splenda

1 tsp minced garlic

1 tsp minced ginger

1 tsp sesame oil


Directions:

Preheat oven to 400F. Prepare baking sheet by lining with tin foil. Spray lightly with oil. Set aside.

Cut the orange in half. Zest and juice 1/2 and cut the other 1/2 in slices.

Add all the ingredients, except for the orange slices, into a container. Whisk to combine.

Add the fillets to the marinade and let sit for 15-30 minutes. Do not throw away the marinade.

Remove the fish from the marinade and place on the prepared baking sheet. Cover with the sliced oranges. Pop the fish into the oven and bake for 10-15 minutes, depending on the thickness.

The rest of the marinade can be poured into a small saucepan and reduced by bringing to a boil and simmering for 10-15 minutes. Can be used to pour over the fish or a side dish.
