Overnight Growing Oatmeal (2 points)

3 servings (1/2 cup)


Ingredients:

1/2 cup old fashioned rolled oats

1 1/4 cups water

1 1/4 cups unsweetened almond milk

1/2 tsp table salt

1 tbsp date powder

1 tsp vanilla extract


Directions:

Combine all ingredients into a medium saucepan.

Bring to a boil, and then reduce to a simmer. Cook and stir until creamy and thickened, about 15 minutes.

Transfer to a bowl or jar, and let cool completely. Refrigerate until cold and thick, at least 5 hours.

Mix thoroughly before serving. Reheat or eat chilled.


Variations:

**Always make sure to adjust your points as necessary.

Apple Cinnamon - Add 1 peeled, cored and grated apple + 1 tsp ground cinnamon to the recipe.

Apple Cranberry - Add 1 chopped apple + a handful of cranberries + 1 tsp of cinnamon to the recipe.

Chocolate - Add 1 1/2 tbsp unsweetened cocoa to the recipe.

Coffee - Use coffee instead of water + 2 tsp instant coffee to recipe.

Peanut Butter - Add 2 tbsp peanut powder to recipe.

Peanut Butter & Banana - Add 2 tbsp peanut powder + 1 pureed banana + 1 tsp cinnamon to the recipe.

Strawberries & Cream - Use brewed strawberry tea instead of water + 1 cup chopped strawberries to the recipe.

Chai - Use chai tea instead of water + 1 tsp cinnamon.

Pumpkin Chai - Use brewed chai tea instead of water + 1 cup pumpkin puree + 1 tsp pumpkin spice to the recipe.

Gingerbread - Add 1/4 tsp cloves + 1/4 tsp allspice + 1/2 tsp ginger +1 tsp cinnamon + 1 tbsp molasses to the recipe.

Pumpkin Pie - Add 1 cup pureed pumpkin + 1 tsp pumpkin pie spice.

Fruit - Add chopped 1 cup of any fruit to the recipe.

Carrot Cake - Add 1 cup grated carrot, 1/2 cup drained crushed pineapple, 1 tsp of cinnamon + 1/2 tsp allspice to the recipe.

Carrot Cranberry - Add 1 cup grated carrot + a handful of cranberries + 1 tsp of cinnamon + 1/2 tsp of allspice + a splash of lemon or orange juice.

Tropical - Add 1 cup of ginger pineapple sauce (see recipe) or drained crushed pineapple + 1/2 tsp of coconut extract to the recipe.

Banana - Add 1 pureed banana + 1 tsp cinnamon to the recipe.

Mocha - Use coffee instead of water + 1 tbsp mocha mix (see recipe) to recipe.

Cinnamon Roll - Add 1 tsp of ground cinnamon + 1/2 tsp of caramel or maple extract to the recipe.

Ginger - Use brewed ginger tea instead of water + 1/2 tsp ginger.
