Pancakes/Waffles (1 point)

4 servings (2 mini waffles or 1/2 large waffle)


Ingredients:

11 tbsp kodiak mix

1/4 cup splenda

1 tsp baking powder

1 tsp ground cinnamon

2 medium banana

2 large eggs

1/4 cup unsweetened almond milk

1 tsp vanilla extract


Directions:

Whisk up kodiak mix, splenda, baking powder, cinnamon, bananas, eggs, milk and vanilla.

Heat up and spray a mini pancake/waffle iron or a large waffle iron.

Add the appropriate amount of batter the pancake/waffle iron.

Cook until brown and cooked through.


Suggested Serving: Serve with fruit, sauces or syrup.


Variations:

Pumpkin Cranberry - substitute the ground cinnamon with pumpkin pie spice and the mashed bananas with a cup of pumpkin. Fold in 1/2 cup of cranberry sauce (see recipe) into the batter.


Apple Pie - substitute the mashed bananas with a cup of unsweetened applesauce.
