Ingredients:
1 cup kodiak mix
1 cup uncooked rolled oats
6 tbsp splenda
1 tsp baking powder
1 tsp baking soda
2 medium bananas, ripe, mashed
1/2 cup unsweetened applesauce
1/2 cup plain fat free greek yogurt
2 large eggs
1 tsp vanilla
1 cup unsweetened canned peaches, drained, diced
Directions:
Preheat oven to 350F. Spray an 8-9" round pan. Set aside.
In a medium bowl, combine the kodiak mix, oats, splenda, baking powder and baking soda. Set aside.
In another bowl, combine the bananas, applesauce, yogurt, eggs and vanilla. Mix well.
Add the wet ingredients to the dry ingredients. Mix until just incorporated. Fold in the peaches.
Bake for 35-40 minutes or until a toothpick inserted into the center comes out clean.
Cool in pan for 10 minutes before transferring to a wire rack to cool completely.
This is so yummy. Even my hubby ate it. Five star!!
