Pineapple Cauliflower Rice (0 points)

4 servings (heaping 1/2 cup each)


2 cups frozen riced cauliflower, thawed

1 cup drained crushed pineapple

1 tbsp finely chopped cilantro

2 tsp lime juice

1/2 tsp table salt

1 pinch red pepper flakes


Directions:

In a lightly sprayed skillet, over medium high heat, add the cauliflower. Cook, stirring occasionally until warmed.

Add the pineapple and cilantro. Stir and continue to cook until warmed throughout.

Add lime juice and seasonings, stir and serve.


Suggested Serving: Great side dish with ham.
