Pineapple Sponge Cake (1 point)

Ingredients:

4 eggs

3/4 cup sweetener

3/4 cup kodiak mix

1/2 cup crushed pineapple, drained


Instructions:

Preheat oven to 350F. Spray the bottom of a 9-12" pan, spring form pans work best. Set aside.

Beat the eggs (until volume increases 2-3 times, about 15 minutes) while gradually adding the sweetener.

Using a spatula, fold in the kodiak mix by thirds and then add the pineapple; be very gentle so you don't over mix.

Pour batter into the prepared pan and bake ( without opening the oven door) for 20-25 minutes or until a toothpick inserted into the centre comes out clean.
