Protein Pancake Bites (1 point)

20 servings (1 each)


Ingredients:

1 large banana, ripe

1/2 cup 0% fat free cottage cheese

1/2 cup kodiak pancake mix

2 eggs

1 tsp vanilla extract

1/2 tsp ground cinnamon

1/2 tsp baking powder

1/4 tsp table salt

1/4 cup chipits


Directions:

Preheat the oven to 350F. Prepare a 24 well mini muffin by lightly spraying 20 wells. Set aside.

Blend together all the ingredients except for the chocolate chips. Fold in the chocolate chips.

Divide the batter, evenly, into the wells of the prepared pan (3/4 full).

Bake for 15 minutes or until the bites are slightly golden and cooked through.


Suggested Serving: Serve with a drizzle of maple syrup or on their own for breakfast, brunch or snack.
