Ingredients:
1 1/2 cups rolled oats
1 1/4 cups kodiak mix
1/2 cup splenda
1 tsp baking powder
1 tsp baking soda
1/2 tsp table salt
1 tbsp pumpkin pie spice
2 bananas, ripe and mashed
1 cup pumpkin puree
2 eggs
1 tsp vanilla extract
Directions:
Preheat oven to 350F. Prepare a 12 well muffin tin by lightly spraying 12 wells or using parchment muffin cups. Set aside.
Add the oats, kodiak mix, splenda, baking powder, baking soda, salt and pumpkin pie spice to a large bowl. Mix and set aside.
In a medium bowl, add the mashed bananas, pumpkin, eggs and vanilla. Mix well and add to the dry ingredients and mix until just combined.
Bake for 25-30 minutes or until golden brown and a toothpick inserted into the center comes out clean.
Delicious! A great afternoon snack or for breakfast with yogurt and blueberries.
