Pumpkin Bran Muffins (2 points)

Ingredients:

1 cup kodiak mix

3/4 cup oat bran

3/4 cup rolled oats

1/4 cup splenda

1 1/2 tsp pumpkin pie spice

1 tsp baking powder

1 tsp baking soda

1/2 tsp table salt

1 cup pumpkin puree

1/2 cup plain greek yogurt

1/4 cup unsweetened applesauce

2 large eggs

2 tsp molasses

1 tsp vanilla extract


Directions:

Preheat oven to 350F. Prepare a 12 well muffin tin by lightly spraying the 12 wells or lining them with parchment cups. Set aside.

Add the kodiak mix, oat bran, oats, splenda, pumpkin pie spice, baking powder, baking soda and salt to a large bowl. Mix and set aside.

In a medium bowl, add the pumpkin puree, greek yogurt, applesauce, eggs, molasses and vanilla. Mix well and add to the dry ingredients until just combined.

Divide up the batter into the 12 prepared wells. Make sure to mound the batter so it is higher in the center.

Bake for 25-30 minutes or until browned and a toothpick inserted into the center comes out clean.
