Ingredients:
1 cup rolled oats
3 tbsp splenda
1 tsp baking powder
1 tsp pumpkin pie spice
1/2 tsp table salt
3/4 cup plain fat free greek yogurt
1/3 cup pumpkin puree
1/4 cup unsweetened almond milk
2 large eggs
1 tsp vanilla extract
Directions:
Preheat oven to 375F.
Spray 4, 1 cup oven safe ramekins. Set aside.
Add oatmeal, splenda, baking powder, pumpkin pie spice, salt, yogurt, pumpkin, milk, eggs and vanilla to a blender. Blend until the oats are broken down.
Divide the batter, evenly into the prepared ramekins and bake for 20 minutes or until a toothpick inserted in the center comes out clean.
Suggested Serving: These can be eaten warm (or warmed up) or cold with fruit, syrup, sauces and/or cool whip.
