Pumpkin Pancakes/Waffles (1 point)

12 servings (1 pancake, 1 mini waffles or 1/4 large waffle)


Ingredients:

1 cup kodiak mix

1 tbsp splenda

1 tsp baking powder

1/2 tsp pumpkin spice

1/4 tsp table salt

3/4 cup unsweetened almond milk

1/4 cup pumpkin puree

1/4 cup greek yogurt

1 large egg

1/2 tsp vanilla extract



Directions:

Put all the ingredients in to a blender and blend until you have a pancake like batter.

Heat a non-stick skillet or waffle iron. Lightly spray with oil.

Drop batter 2 tbsp for the skillet or small waffle iron and 1/2 cup for the large waffle iron.

For the pancakes, cook until edges are bubbling and then flip and cook until pancakes are cooked through.

For the waffles, drop batter into the small or large waffle iron and heat until cooked through.


Suggested Serving: Serve with fruit, no sugar added syrup and or fat free cool whip.
