Ingredients:
1 cup quick oats
1 cup kodiak mix
6 tbsp splenda
2 tsp pumpkin pie spice
2 tsp baking soda
1 tsp baking powder
1/2 tsp table salt
1 cup pumpkin puree
1 large egg
1 tsp vanilla
1/3 cup plain fat free greek yogurt
1/3 cup unsweetened almond milk
Directions:
Preheat oven to 350F. Spray an 8-9" round pan. Set aside.
In a medium bowl, combine the oats, kodiak mix, splenda, pumpkin pie spice, baking soda, baking powder and table salt. Set aside.
In another bowl, combine the pumpkin, egg, vanilla, yogurt and milk. Mix well.
Add the wet ingredients to the dry ingredients. Mix until just incorporated.
Pour the batter into the prepared baking pan and smooth the top.
Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
Cool in pan for 10 minutes before transferring to a wire rack to cool completely.
Suggested Serving: You can add in 1/2 cup of fruit (berries), pepitas, nuts or chocolate chips. You may have to adjust your points accordingly.

I made this today. It was good. I’m thinking of adding a little unsweetened applesauce sauce for a little extra sweetener. Do you think that would work?
