Ingredients:
1 cup self rising flour
1/2 cup plain fat free greek yogurt
1/4 cup pumpkin puree
2 tbsp no sugar added pancake syrup
1 tsp pumpkin pie spice
1 egg white
1 tbsp pepitas
Directions:
Preheat the oven to 375F. Prepare a baking sheet or small donut pan by lightly spraying with oil. Set aside.
In a medium bowl, mix the flour, yogurt, pumpkin, syrup and spice together, with a mixer, until a dough forms.
Flour your hands and remove the dough from the mixing bowl. The dough will be sticky.
Knead the dough for 6-7 turns and then divide into 8 equal parts. Roll each section into a ball and poke a hole through the center and place on the prepared baking sheet or small donut pan.
Brush the tops with the slightly beaten egg white and sprinkle with the pepitas. Bake for 20 minutes. Allow to cool before slicing and toasting.
These bagels can also be made into 5 regular size bagels for 2 points each.
Suggested Serving: Serve with fat free cream cheese and/or fruit jam.
