Ingredients:
2 salmon filets
1 10 oz pkg broccolini
2 tsp no added sugar pancake syrup
2 tsp water
1 lemon, divided
1 tsp minced garlic
1 tbsp soy sauce
1/2 tsp black pepper
Directions:
Preheat oven to 400F. Line a cookie sheet with foil and spray lightly with oil.
Cut a lemon in half. Cut one of the halves into thin slices. Arrange on cookie sheet.
Place salmon filets and broccolini on top of the lemon slices. Spray everything lightly with oil. Set aside.
In a small bowl, mix the syrup, water, juice from the other half of the lemon, minced garlic, soy sauce and pepper.
Drizzle the sauce all over the salmon and broccolini. Bake for 12-15 minutes.
Variations: You can substitute any type of fish and broccoli instead of broccolini.
