Ingredients:
2 salmon fillets, skin removed, cut into 1" cubes
1/2 cup red onion, chopped
1 tbsp capers, chopped
1 tbsp fresh dill, chopped
1 tbsp fresh chives, chopped
85 gm light feta cheese, crumbled
8 large eggs
Directions:
Preheat oven to 375F. Spray a 9" round baking pan.
Add to the prepared pan; the cubed salmon, chopped capers, dill and chives.
Spread the crumbled feta all over the top.
Beat the eggs and pour over the salmon mixture. Lightly wiggle the pan to make sure the egg is evenly spread.
Bake for 30 minutes or until the center is no longer wet.
Let rest 10 minutes before slicing.
Suggested Serving: Serve with hollandaise sauce and a sprinkle of fresh chopped chives.
