4 servings (1/4 mixture)
Ingredients:
2 large chicken breasts
1/4 large onion, diced
2 tsp garlic, minced
1/2 cup no sugar added ketchup
1/2 cup water
2 tsp date powder
1/2 tbsp dijon mustard
1/2 tbsp hot sauce
1/2 tsp worcestershire sauce
1/4 tsp smoked paprika
1 pinch red pepper flakes
Directions:
In a large, lightly sprayed skillet, over medium high heat, brown the chicken breasts. Remove the chicken and place in a large saucepan, set aside.
To the skillet, add the onions and garlic. Saute until the onions are translucent and slightly browned. Add to the chicken. Set aside.
In a medium bowl, whisk together the rest of the ingredients and pour over the chicken mixture, stir and heat over medium high heat until mixture starts to boil, reduce to simmer and cook until chicken is so tender, it pulls apart.
Shred the chicken with 2 forks.
Suggested Serving: Serve on toast, buns or on it's own.
