8 servings (1/2 cup each)


Ingredients:

2 cups uncooked butternut squash, seeded, peeled and cubed

1 cup uncooked kabocha squash, seeded, peeled and cubed

1 cup uncooked parsnips, peeled and sliced

2 medium uncooked carrots, peeled and sliced

2 tsp minced garlic

1 tsp dried thyme

1 tsp table salt

1/2 tsp black pepper


Directions:

Add all the vegetables into a large pot and cover with water. Bring to a boil and boil for 15-20 minutes or until all the vegetables are soft.

Drain the vegetables. Add the garlic, thyme, salt and pepper. Mash until your desired consistency and serve.
