Ingredients:
2 cups uncooked rolled oats
4 tbsp splenda
1 tsp baking powder
1/2 tsp table salt
1/2 tsp ground cinnamon
2 large banana, ripe
1/2 cup plain fat free greek yogurt
1 large egg
1 tsp vanilla extract
Directions:
First you have to make up the strawberry fruit jam... see recipe. The jam has to set (can take up to 4 hours).
Preheat the oven to 375F. Line an 8" x 8" square pan with parchment paper and lightly spray with oil. Set aside.
Place 1 cup of the oats into a food processor or blender until the oats are broken down.
Transfer the oat flour to a large mixing bowl, and add the remaining cup of rolled oats, splenda, baking powder, salt and cinnamon. Mix well and set aside.
Add the ripe banana, yogurt, egg and vanilla into a blender and blend until mixed. Add to the dry ingredients and mix well.
Transfer 1/2 the batter to the prepared pan. Spread it out to the corners. Bake for 10 minutes.
Pull the pan out of the oven and spread the strawberry jam, evenly, over the oat mixture. Spoon the remaining oatmeal batter over the jam and spread out lightly.
Return to the oven to bake for 30 more minutes or until the topping is cooked through and golden brown.
Remove from the oven and cool completely (I refrigerated them for a couple of hours) before cutting into squares.
