Ingredients:
1 1/4 cups kodiak mix
4 tbsp splenda, divided
1/4 tsp baking powder
1/4 tsp table salt
3 tbsp unsweetened almond milk
1/4 cup + 1/3 cup unsweetened applesauce
1 tsp almond extract
1 pound strawberries, sliced
1 1/2 tbsp cornstarch
3/4 cup rolled oats
1 tsp ground cinnamon
Directions:
Preheat oven to 350F. Prepare an 8"x 8" square pan by lining with parchment paper or spraying lightly with oil. Set aside.
In a medium bowl, combine 1 1/4 cups of kodiak mix, 2 tbsp splenda, baking powder and salt. Set aside.
In a small bowl, mix together the milk, 1/4 cup of applesauce and the almond extract. Add to the kodiak mixture. Mix until combined and press into the bottom of the prepared pan to form a crust. Bake for 15 minutes.
In another medium bowl, combine the strawberries and the cornstarch and layer on top of the baked crust. Set aside.
In another medium bowl combine the oats, 2 tbsp splenda and the cinnamon. Add 1/3 cup applesauce and mix.
Crumble oat topping on top of the strawberries. Bake for another 25-30 minutes or until topping is browned.
Suggested Serving: Serve warm or cold with fat free cool whip.
