Sweet Potato Egg Bake (2 points)

Ingredients:
2 medium sweet potatoes, cooked
3 eggs
1/3 cup fat free cottage cheese
1 cup salad greens
4 cherry tomatoes, halved
35g light feta cheese, crumbled
42g light mozzarella, shredded
Directions:
Preheat the oven to 375F. Prepare a 9" pie plate by lightly spraying it with oil. Add the cooked sweet potato and press down, with a glass, to form a crust. Set aside.
In a bowl, whisk together the eggs and cottage cheese. Pour into the sweet potato crust.
Add the greens and tomatoes. Sprinkle on the cheeses.
Bake for 35-40 minutes or until the eggs are set and the cheese is melted.
