2 servings (1/2 mixture)
Ingredients:
4 oz sweet potatoes, 1" cubes
4 oz little potatoes, halved
1 tbsp olive oil
1 oz red onion, diced
6 oz canned chickpeas, drained
1/2 tsp ground coriander
1/4 tsp ground cumin
1/4 tsp paprika
1/4 tsp ground tumeric
1/2 tsp minced garlic
3 rings banana peppers, diced
1 tsp za'atar seasoning
Directions:
Par boil the potatoes and sweet potatoes for 5 minutes.
Heat olive oil in a large skillet over medium high heat. Add the red onion, sweet potatoes, potatoes and chickpeas. Add the spices and mix.
Cook, stirring frequently, until the onion is nicely caramelized and the potatoes are browned, 5-10 minutes.
Add the garlic and banana peppers and continue cooking for another minute. Sprinkle with the za'atar.
Suggested Serving: Serve with eggs or as a side dish.
