Sweet Potato Pancakes (1 point)

3 servings (2 pancakes each)


Ingredients:

1 cup cooked mashed sweet potato

2 eggs

1/2 tsp ground cinnamon

1 pinch table salt


Directions:

Combine the sweet potato, eggs, ground cinnamon and salt in a small blender. Set aside.

Heat up a skillet on medium high heat. Lightly spray with oil.

Add a couple of tbsp of batter (spread out) and cook for about 3 minutes. Very gently, flip and cook on the other side for 3 minutes.

Repeat with remaining batter. You should get 6 pancakes.


Note: Watch carefully, burns easily.


Serve with fresh fruit, unsweetened applesauce, maple syrup, honey or jam.
