Ingredients:
4 tandoori spiced chicken sausages
1/2 cup fat free chicken broth
2 mangoes, peeled, pitted, cubed, divided
1 large orange, peeled, chopped
2 tsp ginger, minced
Directions:
Heat a large, sprayed skillet to medium high.
Remove casing from sausage, saute in frying pan, breaking up the sausage into chunks. Cook until no longer pink.
To make the sauce, place the sauce, chicken broth, one mango, orange and ginger into a blender or food processor. Blend until smooth.
Pour into the skillet with the cooked sausage. Simmer for 5-8 minutes.
Add the remaining cubed mango to the sauce. Mix and serve.
Note: If you cannot get the tandoori spiced chicken sausage, you can use regular ground chicken breast and add these spices before cooking...
1 tsp garlic, minced
1 tsp ginger, minced
1 tsp paprika
1/2 tsp ground cumin
1/2 tsp ground coriander
1/2 tsp garam masala
1/2 tsp ground turmeric
1 pinch cayenne pepper
Suggested Serving: Serve over cauliflower rice with peas.
