Teriyaki Chicken Meatballs (1 point)

4 servings (3-4 meatballs)


Ingredients:

1 pound ground chicken breast

1/4 cup dried breadcrumbs

1 egg

2 tsp garlic, minced

1 tsp ginger root, minced

1 scallion, minced

1 tbsp soy sauce

4 tbsp sugar free teriyaki sauce


Directions:

Preheat oven to 350F. Line a baking sheet with foil. Set aside.

In a large bowl add the chicken breast, bread crumbs, egg, garlic, ginger, scallion and soy sauce. Mix well to combine.

With damp hands, form chicken mixture into 2" balls (~12-16 balls) and transfer to the prepared baking sheet.

Baste the meatballs with the sugar free teriyaki sauce.

Bake for 20-30 minutes, flipping them at 10 minutes, and basting on more teriyaki sauce.


Suggested Serving: Serve with fried cauliflower or palmini rice. Drizzle with more sugar free teriyaki sauce.
