Thai Cucumber Salad (0 points)

4 servings (1/4 mixture each)


Ingredients:

1 medium english cucumber, sliced

1 1/2 green onion, sliced

1/4 cup rice vinegar

2 tsp date powder

1/3 tsp sesame oil

1/4 tsp red pepper flakes

1/4 tsp table salt


Directions:

In a small bowl, combine the rice vinegar, date powder, sesame oil, red pepper flakes and salt. Set aside.

Add the cucumber and green onions to a medium bowl.

Add the dressing. Stir to combine. Serve immediately or refrigerate until ready to eat. Give the salad a brief stir before serving.
