Tropical Overnight Oats (2 points)

3 servings (1 cup each)


Ingredients:

1 1/2 banana, ripe, mashed

3/4 cup plain fat free greek yogurt

1/2 cup unsweetened almond milk

2 tsp no sugar added pancake syrup

3/4 cup old fashioned oats

1/2 cup crushed pineapple, drained

1/2 cup mango, diced

1/2 tsp cinnamon

1/2 tsp coconut extract


Directions:

To a medium bowl add the mashed banana, yogurt, almond milk and syrup. Mix well.

Fold in the old fashioned oats, pineapple, mango, ground cinnamon and coconut extract.

Divide the mixture evenly (~1 cup) into 3 mason jars.

Cover and refrigerate overnight.


Suggested Serving: Serve slightly warmed or cold, topped with fresh fruit and a drizzle of no added sugar pancake syrup or a sprinkle of brown sugar sweetener.
