Turkey Sausage & Cheese Frittata (1 point)

Ingredients:

1/2 pound ground turkey breast

1/2 tsp table salt, divided

1/2 tsp black pepper, divided

1/3 tsp dried sage

1/3 tsp dried thyme

1/8 tsp dried marjoram

1/8 tsp crushed red pepper

8 large eggs

1/3 cup yogurt

2 oz light shredded cheddar


Directions:

Preheat oven to 350F. Prepare an 8-9" round baking pan by lightly spraying with oil. Set aside.

Place the ground turkey in a mixing bowl and add 1/4 tsp of the salt, 1/4 tsp of the pepper, the sage, the thyme, the marjoram and the crushed red pepper. Mash and stir together until combined.

Spray a large skillet lightly and heat up on medium high heat. Add the seasoned ground turkey, cook while breaking up into small chunks, until cooked through. Transfer to the prepared pan. Set aside.

Add the eggs, yogurt, 1/4 tsp salt and 1/4 tsp pepper to a medium bowl and whisk together until mixed. Pour over the cooked turkey. Mix.

Sprinkle the light shredded cheese over the top and bake for 30 minutes. Let cool a bit before slicing.
