Yogurt Pancakes (1 point)

4 servings (1 pancake each)


Ingredients:

2/3 cup kodiak mix

1 tbsp splenda

1/4 tsp baking powder

1/4 tsp baking soda

1/2 cup plain fat free greek yogurt

1 large egg

1/4 cup unsweetened almond milk

1/4 tsp vanilla extract


Directions:

Stir together the kodiak mix, splenda, baking powder and soda in a small bowl and set aside.

Whisk together the yogurt, egg, milk and vanilla in another bowl.

Add the dry ingredients to the wet and stir until combined.

Spray a mini pancake griddle lightly with oil.

Add 1/4 cup batter to the hot grill. Cook 2-3 minutes or until golden brown. Repeat with remaining batter.


Suggested Serving: Serve with fruit and syrup.
