Zucchini Muffins (1 personal point)

Ingredients:

1 1/3 cup old fashioned oats

1 1/4 cups kodiak mix

1/4 cup splenda

2 tsp baking powder

1 tsp ground cinnamon

1/2 tsp table salt

1/8 tsp ground nutmeg

2 bananas, ripe and mashed

2 eggs

1/3 cup applesauce

1 tsp vanilla extract

1 cup zucchini, grated, wrung out


Directions:

Preheat the oven to 350F. Prepare a muffin tin by spraying 8 wells lightly with oil. Set aside.

In a medium bowl combine the oats, kodiak mix, splenda, baking powder, cinnamon, salt and nutmeg. Set aside.

Grate the zucchini and wring out in a tea towel to get rid of excess moisture. Set aside.

In another medium bowl combine the bananas, eggs, applesauce and vanilla.

Add the dry ingredients to the wet ingredients. Add in the zucchini. Mix until just combined.

Divide evenly into the 8 prepared wells .

Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.

Is it 1 cup or 1&1/2 cups grated zucchini? Or both?
