Ingredients:
1 3/4 cups uncooked oats
1/4 cup splenda
1 tsp baking powder
1 tsp ground cinnamon
1/2 tsp ground nutmeg
1/2 tsp table salt
2 large eggs
1/3 cup plain fat free greek yogurt
1/3 cup unsweetened applesauce
1/4 cup unsweetened almond milk
1 tsp vanilla extract
1 cup apple, cored and chopped
1 cup cranberries
Directions:
Preheat oven to 350F. Lightly spray a 8" square or 9" round baking pan and set aside.
In a medium bowl combine the oats, splenda, baking powder, cinnamon, nutmeg and salt. Mix and set aside.
In another medium bowl combine the eggs, yogurt, applesauce, milk and vanilla extract. Mix well.
Add the wet ingredients to the dry and mix until well combined. Fold in the apple and the cranberries. Mix well.
Spoon the batter into the prepared pan.
Bake for 45 minutes or until golden brown and an inserted toothpick comes out clean. Remove from oven and let cool.
Suggested Serving: Serve hot or cold with or without milk, no sugar added syrup and fruit.
Very good too and mini pans are a great idea. Will have to look for some.
