Fruit Loaf

16 servings (1/2" slice each)


Ingredients:

1 3/4 cup kodiak pancake mix

1 1/2 tsp ground cinnamon

1 tsp baking powder

1/2 cup dried medjool dates, pitted and chopped

1/2 cup dried prunes, chopped

1/3 cup dried apricots, chopped

1/3 cup dried berries/raisins (cranberries, blueberries, currants)

1/2 cup unsweetened almond milk

1/3 cup orange juice

2 tbsp olive oil

1 tsp vanilla extract


Directions:

Preheat the oven to 400F. Prepare a baking sheet by lining it with parchment. Set aside.

In a large bowl, add the kodiak, baking powder, dates, prunes, apricots and berries. Mix and set aside.

Mix the milk, juice, olive oil and vanilla together. Add the wet ingredients to the dry and mix until just combined.

Oil your hands and add the mixture to the center of the prepared pan. Shape the dough into a loaf about 8" x 3".

Bake the loaf for 12 minutes, then turn down the oven to 350F. Continue baking for 12-15 minutes until golden brown outside and a pick inserted into the center comes out clean.

Let cool down for 3 hours before slicing into 1/2" pieces.
